The word ‘whey‘ refers to milk serum which is the liquid by-product produced during the curdling of milk.

TYPES OF WHEY PROTEIN

When milk is treated to cause a shift in its pH value, the casein coagulates and separates. The raw whey is left uncurded on top of the casein.
